So imagine this you've been living as human, you're whole life and suddenly one day you need money for high school because you have no parents which is natural to you.You go find an part-time job. The job you find is being the manager of café.Okay, you get me here.
Then weeks pass and you notice something the people working here don't talk much, —they always have lifeless eyes. The customers that do come here only buy one thing and that is coffee.
One day,the coffee machine runs out of beans and the beans are in the staff room(for some reason) but they told you never go in the staff room. So you've never gone to the staff room.
You go to the staff room and found out that there are is a door. Your curiosity is too much to ignore it and you go down.
And found out that there is big laboratory.
You look around more to find cells and severed human body parts. You freak out and run to find reports on table and there's your name written on it. Kenzaki Yukihoto(ケンザキ•ユキホと).At the end of it is written 「Failed Creation」
And there are bunch of other human experiments.

Now what will you do.
Btw this is the premise of a novel i am writing.
And kenzaki is the protagonist.

I want to know what's the most realistic reaction he or you would give.

The novel is called Failed Creation. If Your curious.

I find it a bit hard to believe that the laboratory wouldn't even have a locked door, but is solely built on trust to the monitored. Also, if he was inhuman the whole time you need an explanation why he wouldn't have noticed anything off until now. Also, why everyone is acting so weirdly, but nobody notices anything is off.
Personally, I like it more the other way round. The character was human, something happens and then they slowly notice more and more changes, while trying to ignore/suppress them to continue life in society.

The original premise is great for a short to mid-length horror story. Yours is better for a more epic feel, like Invasion of the Body Snatchers. Both could work, depending on the nature of the experiment (and the reason(s) why the store was allowed to run out of beans/leave the lab unlocked - did the scientists die? was it all a test?).

I've built so much existential crisis resistance I would just shrug and went back.

I'd think that's bullshit, think the owner is a killer that's aiming for me and call the authoritoes immediately, take photos and, also asap, go to a very crowded place.

This type of story; "The main character is/becomes/discovers that they are a Monster," is also known as a Gothic.
Both Horror stories and Gothic tales delve into the realm of emotional trauma such as; revenge, abuse, and hate -- including, if not especially, sexual trauma. However, the darkness in a Gothic tale is not expressed or defined by graphically detailed, and gruesome, violence as it is in a Horror. Though violence is featured in the Gothic, violence is not the main focus of the story.

The drama of Despair is the vehicle of the Gothic, where a Horror story is driven by the action of Gore.

But are they real?
Yes, they are real.

I want to know what's the most realistic reaction he or you would give.

I identify as a metal pipe, checkmate

No but, why should people worry about their species?

People immediate reaction would range from denial to 'based, I knew I was a built different!'

If you discover that you're not human and you lived all your life without any superpower or instinctive impulse that set you out apart from other normal human, the most you can do with that information would be to yap about it on twitter

If you want to inflict despair, you need to set up the protagonist's contempt towards an identity, like how Dr. Jekyll realizing he's Hyde is harrowing despair

No like he has PTSD. And ahhh i might be giving spoilers.
Existential crisis goes the both way. As far as premise goes, nobody could be certain they are, in fact, real.
Hypothetically,A person mind—reaction is the most simple yet specificating thing.

It's good then

The real identity must be emotionally tied to the circumstance/backstory. If he's just a genetically engineered potato, it won't have any relevance.

If he lives happily with his family but he's a vicious monster that threaten his loved ones by being close, it would alienate him and force him to give up on his life as he enjoyed it

So the question "what if you discover you're not human?" is too vague alone
