This is my first time posting a novel in English, so I'm having an AI translate the novel I wrote in Japanese. Will this be okay on Scribble Hub?

I've scheduled my post for 6:00 PM Japan time, but are there any prime times on Scribble Hub when it's more likely to be viewed?

I'm not sure if it's well known outside of Japan, but I've also posted on a site called ”小説家になろう" (Let's Become a Novelist) (Japan's largest novel submission site.)

There's no problem posting a translation of your own story. The easiest way to prove the story is yours, is a simple appendix to the synopsis/summary/description everywhere you post it, that lists all the sites where you do.
You might also consider making it clear in the synopsis it's an AI translation, just so people do not take it for AI generated story. AI will force its quirks into the writing unless you heavily edit the output, and if your story is mistaken for AI generated, you might see it shadow banned.

As for prime times, the best times are the worst times.
The best times are probably matched to the US time zones, but since that's what most people would do, there's also the greatest competition for time slots.
Ultimately, consistently posting over longer period is far more important than posting at any specific time.

When Helena's dormant special blood awakens, she transforms into the very creature her beloved Octus knighted and sworn to hunt.

This says Octus has granted knighthood to the creature she became, and by giving the title to it, the sentence further implies she turned not into the same type of creature, but a specific, individual specimen he swore to hunt.
If I were to guess, it was meant to say something like "...her beloved knight Octus swore to hunt/was sworn to hunt"?

First off, welcome to the SH (ScribbleHub) community.
Second, despite being new here myself, I don't think there would be any issues posting a translation of your own work, but that would be something to check with the moderation team / staff about. Asking on the discord is probably your best bet.

As others have mentioned, it would definitely be a good idea to mention that the story is an AI-Translated piece of one of your own stories in the Synopsis so readers don't get the wrong idea.
You may also want to consider working with at least one or two other editors (on discord) as well who can help you polish the translation. (AI is a helpful tool for translations, sure, but it isn't without its flaws).
