I think Mushoku Tensei did it well, it start with the birth of the MC, the story is about his grow and it end with him dying from old age peacefully.

I love it when stories continue after they end. Arifureta comes to mind and it has like 200+ extra chapters past the epilogue when they returned to Earth, and they get to flex their powers, go to new worlds and flex there, bolster relations, get insight on characters that barely saw screentime, see the progress of the isekai world after they left and see how characters there are also fairing, etc.
