Unironically a comfort food for me, though I'm not personally a fan of the instant version.

It was just a joke. But the best hitsumabushi I’ve ever tried imo was from Atsuta Hōraiken Jingu in Nagoya (attached above).
As for the fluffy cloud thingy, that’s a secret.
