All rights reserved: Use this 99.99% of the time. It means it is your work, you retain the copyright, etc.
Public domain: It is out in the open. Anyone can use it, anyone can copy it, basically, nobody owns it after its out on the web and can do whatever they want with it.
Creative Commons: it is between the two. There are things in the book that others can freely share, translate, use, etc.

You still want All Rights Reserved, even if you want fanfic of your work.

Under US Copyright law, you own the copyright the moment your work is in a fixed tangible format (Ex. Writing it down), unless it's a Work for Hire (but that requires a contract agreement usually).

Public Domain means you waive *all* your rights, and isn't something to be done lightly.
