"real" chocolate is basically high cacao% dark chocolate, which is heavy on the cacao and light (or empty) on everything else. it is also bitter as fock.

This is true. I have eaten bars that are over 70% cacao, bitter as I will get out. Not very enjoyable. I much prefer milk chocolate
