Fifth person. Really, whichever fits the story best. If you're doing a noir, or "cozy mystery" those often work best in first person. Any can work for horror. For fantasy, you're usually better served by third person, especially if you have a group and not a single protagonist.

I can enjoy it when there is some variety to it (a lot of classic TV shows - say, Star Trek, had more than their share of overly exaggerated acting but it wasn't the same schtick every time, as it often is in "Sports-Entertainment" ... or, heck "Reality Television")

An AI reader is not going to be of much help - they'll get words wrong, give wrong inflections - unless you have a VERY top end one.

One thing that can help with dialogue is to read it out loud and see how it sounds, rather than just imaging it. Even better if you can find someone else to read it out loud so you can take notes, but just doing the reading yourself can help a lot
