    You may need to knead it more. It has to get tough before it can get easy to manipulate. If you need to, use a stand mixer with a dough hook and add flour to it in small amounts until it rides up the hook. If that doesn't work then IDK.

    Make a 50/50 dough as it is the easiest dough to work with. I would also look up some other recipes for this to help as I am not an expert. It's equal parts flour and water. Add yeast. Mix with a spoon and let rest for an hour or up to 12 hours. Dust with healthy amount of flour and knead...
