Yeah but you can't really taste them it's just to help add air.

True. The fun part about it though is that if you add gelatin then it'll make marshmallow.

In my experience, and maybe I am misremembering, nougat bars are less liquidy and more crunchy.
Maybe I am thinking of a toffee bar..?

Nougat is just heated sugar with whipped egg whites. It can be crunchy or soft depending on how much moisture is in it. There are like a million different kinds of nougat in America and they vary depending on where you go.

I think they mean this nougat. There are anywhere from soft versions to ones where you can break your jaw... I had the second one. Would not recommend

Considering the glue statement my thoughts went straight to the super soft variant, i could put my paw in it and it would ooze out without breaking the chocolate shell.
