Knowledge, that's why I pound my meat whenever I get the opportunity ?notice:thin meat cooks faster and can be more tender,Chicken breasts for example are an odd shape.The outside cooks first and it take awhile to cook the inside. Pounding it flat you get a more even consistent cook-nya.

Besides enhancing flavor by seasoning what do you mean improves cooking results? Are you talking about how fast it'll cook on the inside?This also improves cooking results and enhances flavor by allowing seasonings to penetrate more deeply.
