For one day, the protagonist and antagonist swap bodies with each other, both needing to role play as the other to not be discovered as a fake. If they are discovered, the swap ends immediately and the discovered one’s memories are transferred to the other to sift through at their discretion. With all that in mind, what would the two do to sabotage the other as they try maintaining their new roles?

Note: Neither has access to the other’s memories while the swap is active

So a magical version of the movie "Face/Off" (used plastic surgery in that one IIRC)? If they know it is only for one day, then there is a LOT of little damage they could do - but if they do not know, then they could do even wilder things - start or destroy relationships, drain bank accounts, openly commit crimes (though if they do not know if they will ever switch back, this one becomes problematic)...
For example, if I were the bad guy in the good guy's body, and knew it would last a day, I would try to publicly murder their partner/spouse/S.O,/best friend (depending on the situation), just so that when we switched back, the hero would be the one behind bars (and without that other person for support as well). But if I did not know whether we would switch back or not, I would seek to start new relationships, and just mess up everything.

As the hero in the villain's body, if I knew I had one day, I would first betray some allies to get them in jail, and then turn myself in with only minutes to go before we reverted... But if I did not know if I would ever revert, I would probably try to "soften" the villain's actions, essentially start a slow move to "reform."

What happens if one of them dies during the swap? Suicide tactics might become viable.

It's really situational based on what type of genre it is. The obvious choice would be going full murderhobo then crippling/killing the other's body at the end of the day.

Just so it doesn’t end so simply, let’s say they can sense the conditions of their bodies, and can essentially put each other in MAD.

Tis MAD? Metaphysical.Awareness.Disorder?

Well, for this little bit of writing I'm making, it would be pretty simple.
The protagonist ends up just becoming the antagonist, straight up, while the antagonist just continues existing in this new body.

Because, well - hivemind villain, the protagonist either dies immediately from mental strain due to replacing all minds in the hivemind, or they are snuffed out instantly from the combined will of the hive. And as for the individual of the hivemind removed, it'll be like cutting off a finger - even though it isn't connected at all, that doesn't mean it wasn't a part of you, so it'll just come back to the hivemind, re-connect, and the protagonist would die.
