Preheat oven to 250°F
3 egg whites
1/4 tsp cream of tartar
Whip in a blender till stiff white peaks form. Add 1 cup of granulated sugar 1 tbsp at a time till combined. Do not stop whipping. Add 1/2 tsp mint extract, 1/4 tsp rum extract, 1/2 tsp vanilla extract, and 4 drops of green dye. Fold in 1/2 cup of chocolate chips.
Scoop onto a baking sheet lined with parchment paper. Bake for 1 hour. Turn off oven. Leave cookies in oven for 2 hours after and do not open the oven until then. Pull out and let cool. Serve!
