Brits use pounds too it's just a lot sadder to lose British pounds than American pounds.

Sometimes recipes use imperial measurements while others use metric measurements. Since I am American I usually use Imperial, which helps for measuring large quantities of liquid and weighed ingredients. Keeping a recipe to the same unit of measurement makes it so much easier. Though for smaller, more precise recipes, or foreign recipes, the metric system is far better than converting it.
