I don't know how to make that symbol, but the meaning isn't so different that it matters. Probably like twelve people know the difference.

The real problem is that you made a grammar error. [I walked out to see] is a broken clause. You should probably add something like 'a group of people standing around talking about the dungeon'. Then you can describe them all, no need for a delineation.

If you want to use that em dash, then this is the example google used for me.
  • My favorite lipstick shade (which is always sold out) will be back in stock on Tuesday.
Replace the () with your em dash. That's what you're aiming for, I believe.
It can also be a normal interruption, like in my original example.

Try an ordered list, or a colon/semicolon. Theoretically, the em dash should work as a replacement for those as well, but the OP is a bad example.

On ur second example, there was like a... build up pause between the two sentences right? Like for semicolons and colons, it's a pause to take a breather, but the en/em dash were like build up suspense slightly, but not to the point of three dots. As far as I understand?

I mean you could. I’d rewrite it as this:
I walked out to see a group of people—A man with blue skin with strange face tattoos, another tall man with light skin with no ears, and a human woman in all black except for her big wizard-like hat—talking about something something dungeon.
