I eat too little in terms of vegetables. I heard Indians are big on vegetarian food but have never tried Indian food except for bastardized versions of curry. Anyone familiar with Indian cuisine, how does it taste in general?

I work remotely and semi-regularly people from my organisation go out collectively or gather to celebrate someone's birthday.
So I end up in a strange situation where I mostly see my collegues when we party and not at work.
